With its menthol qualities, mint lends itself nicely to all sorts of sweet applications, though this herb can be surprisingly diverse. In North Africa and in the Middle East, mint finds itself along side lamb and beans or in Morocco in the ubiquitous spice blend, baharat. Try using peppermint in your rubs and marinades.
