Mace Blades

Mace is the lacey outer cover of the nutmeg seed. Native to the Moluccas Islands, 1/3 of all mace cultivation now occurs in Grenada, W.I. Mace was used heavily from the Middle Ages until the beginning of the last century when its popularity declined. Its flavor is similar to, but more delicate than, the sturdy nutmeg. Blade mace is used for soups and sauces, and is often found in wine mulling mixtures. It gives a nice lift to béchamel, souffles, and cream cheese desserts.
