Cloves, Ground

Cloves are small, dried, nailed shaped, unopened flower buds native to the Moluccas Islands. They have a sweet, somewhat penetrating flavor that should be used sparingly. Cloves can be bought whole or ground. Ground cloves are commonly used in baking. The word clove is derived from the French clou, meaning "nail." Cloves are harvested mainly in Indonesia, Sri Lanka, and India. Uses for cloves are quite diverse as they marry well with fruit, sweet dishes, pickles, hams, pot roasts, beets, carrots, and sweet potatoes. Joined with lamb and beans, the result is magical.
